Cœur brings the story together: the fruit, its beginnings and the intention of the Atelier. Six expressions share a date-led centre and a recognisable form. Each offers a different way to encounter the creation, one praline at a time.

One idea, six expressions

Pistachio, almond, hazelnut, coconut, coffee and sesame. Each gives Cœur a different point of emphasis while the date remains its starting point. The collection invites comparison: a change of ingredient, a different impression, another reason to return to the same familiar form.

Begin with an ingredient you already enjoy. Let the next choice introduce something different.

Two ways to begin

Pistachio and almond offer two starting points within Cœur. Each brings a distinct ingredient into the relationship between the date-led centre and its chocolate shell.

Try them separately, with a pause between the two. Notice how changing one ingredient changes the impression of the whole. The purpose of the comparison is discovery: finding the expression you are drawn to and recognising what makes it yours.

Hazelnut and coconut extend the collection in different directions. Their familiar identities provide a way into the tasting, while the date and chocolate give each a shared setting.

Look at the finishing detail, then take a bite. Consider how the ingredient is encountered through aroma, flavour and texture. Within the same form, a different relationship emerges. Cœur’s variety is found in these changes of character.

Coffee and sesame complete the six expressions of Cœur. Each offers another way to encounter the date-led centre through an ingredient with a distinctive identity.

They are an invitation to explore beyond an initial favourite. As with every expression, the question is how the elements come together: the first aroma, the texture of the bite and the impression left behind. Let your own preference guide the return.

THE TASTING

A sequence of sensations

A praline is experienced in sequence. First the form and the finishing detail; then the chocolate and the centre; finally the flavour that remains. Give each expression a moment of its own. Attention to those small changes turns choosing from the collection into a personal experience.

There is no prescribed order. Curiosity is enough to begin.

One praline at a time

Take a moment before the first bite. Notice the shape, the surface of the chocolate and the ingredient that identifies the expression. Then taste slowly enough to distinguish the shell from the centre as they meet.

Pause afterwards. What remains may be different from the first impression. You do not need to name every sensation; noticing the sequence is enough. The experience belongs to the person tasting it.
